Some nights you just want something simple that still tastes like you actually cooked.
This smoky chickpea skillet is one of those meals. It comes together quickly with pantry ingredients, and the smoked paprika gives the chickpeas a rich, almost slow-cooked flavor.
You can serve it over brown rice, quinoa, roasted potatoes, or just eat it straight from the pan with whole grain pita bread.
Smoky Chickpea Skillet

Serves 4
This hearty skillet is the kind of meal you can pull together quickly with pantry staples. Chickpeas simmer with onions, garlic, and smoky spices until the flavors deepen and everything comes together in one filling dish. It’s simple, comfort food that works well on its own or spooned over rice or grains.
Ingredients
1 medium onion, diced
3 cloves garlic, minced
2 tsp smoked paprika
1 tsp ground cumin
¼ tsp cayenne pepper (optional)
1 (15-oz) can diced tomatoes
3 cups cooked chickpeas
Sea salt and black pepper to taste
Fresh parsley, chopped
Lemon wedges for serving
Directions
Place a large skillet over medium heat. Add the onion and cook for about 5 minutes, adding a splash of water if needed to prevent sticking.
Stir in the garlic, smoked paprika, cumin, and cayenne. Cook for about 30 seconds to toast the spices.
Add the tomatoes and chickpeas. Stir well.
Simmer for about 10 minutes, until the flavors come together and the sauce thickens slightly.
Season with salt and pepper to taste.
Serve topped with parsley and a squeeze of lemon.
A quick kitchen tip
If a dish tastes flat, it’s often missing acid. A splash of lemon juice or vinegar added at the end of cooking can brighten the entire dish.
